Head Chef - Charlie Soole I was born in Cape Town but grew up in London. A few years ago my wife and I had the opportunity to move to Dorset which we saw as a great opportunity to bring up our son and diversify our culinary skills.  I enjoy walking with my family and foraging for herbs and sea vegetables. I love the traditional South African ‘braai’ or barbecue as it’s known over here. I love an open fire and the theatre that goes with cooking on one. I feel it takes us slightly back to our roots.

Head Chef - Mark Kick With over 20 years’ experience at The Ivy in London, I moved back to my beloved Dorset with my family to pursue a quieter way of life.  I’ve been stationed at The Watch House Café for the past 6 months which I’ve really loved, but I’m excited about the new venture at The Club House and the challenge that goes with opening a new restaurant.  I can’t wait to get stuck in!

With over 20 years’ experience at The Ivy in London, I moved back to my beloved Dorset with my family to pursue a quieter way of life.  I’ve been stationed at The Watch House Café for the past 6 months which I’ve really loved, but I’m excited about the new venture at The Club House and the challenge that goes with opening a new restaurant.  I can’t wait to get stuck in!  

Manager - Lou Lou Brown I’ve been with the Hive Beach Company for almost a year now and offer a wealth of customer service experience throughout various industries.  I am a history buff and love anything to do with classic cars.  The Club House is an opportunity for me to start a project of my own and be able to expand my customer service skills working with people, which I love! If I’m not at work, you’ll find me in the gym or at the shops.

Executive Chef - Stuart Newman Born and raised in Cape Town, South Africa where it’s all about family and friends, sharing and enjoying the experience of fantastic food.  I bring a wide range of experience from worldwide locations such as USA, UK and South Africa and I’m looking forward to the challenge of opening a new restaurant under the reputation of a well known and loved brand!  Stuart oversees The Watch House Café in West Bay, in conjunction with The Club House and The Hive Beach Café .
